STUFFED WHITING
375 degrees

I%1 1/2, lb, whiting fillets
I%3, lb, spinach, fresh
I%1/2, cup, olive oil
I%2, medium, cloves garlic, crushed
I%1, large, onion, chopped
I%2, T, parsley
I%1/8, tsp, bay leaf
I%1/8, tsp, thyme
I%1, tsp, salt
I%1, tsp, black pepper
I%3/4, cup, bread crumbs
I%1, large, lemon, wedged

R% Wash spinach and remove the stems. Heat three tablespoons of olive
R%oil in a saucepan and add spinach. Cook just until the spinach is
R%limp. Drain spinach and chop finely.
R% Add the garlic to the spinach and mix well.
R% In a frying pan, heat three tablespoons of olive oil and saute the
R%onion with the parsley, bay leaf, thyme, 1/4 tsp salt, and 1/4 tsp
R%pepper.
R% Add the spinach and mix well.
R% Put a little more than half of the spinach mixture in the bottom of
R%a large rectangular baking dish.
R% Season the whiting fillets with the remaining salt and pepper.
R% Add at least a tablespoon of the spinach mixture to each of the
R%fillets and roll up tightly securing with a toothpick (if you have
R%any spinach left just add it to what's in the baking dish).
R% Place rolled up fillets in rows on the bed of spinach.
R% Sprinkle with bread crumbs and the remaining two tablespoons of
R%olive oil.
R% Bake in a moderate oven at 375 degrees for 30 minutes.
