REMOVE FROM OVEN AND GRATE ' THE BAR OF GERMAN SWEET CHOCOLATE EVENLY OVER THE BOTTOM OF THE CRUST WHILE IT IS STILL HOT. SET ASIDE TO COOL. SCALD THE 2 CUPS MILK IN A SAUCEPAN OVER MEDIUM HEAT. YOU MAY USE A CANDY THERMOMETER OR THE TIME-WORN BUT ACCURATE METHOD OF HEATING THE MILK UNTIL A THIN SKIM FORMS ON THE SURFACE. MILK SHOULD NOT BOIL. MIX TOGETHER IN A DOUBLE BOILER THE 1/3 CUP FLOUR, 1/3 CUP GRANULATED SUGAR, 1/8 TEASPOON SALT, AND GRADUALLY ADD THE 2 CUPS SCALDED MILK. Continued next page. . .
