Transcription: To the bowl, add one teaspoon of wine, one half teaspoon of salt, one egg white, two teaspoons of corn starch, and two teaspoons of oil. Mix all ingredients in with the shrimp so that all of the shrimp is covered with the mixture. Fold in one cup of corn starch. Corn starch helps the shrimp to fry up crispy and is much better for this purpose than flour. And again, mix well so that all the shrimp is well covered. Cornstarch is used much more often than flour in Chinese cooking.
