On point 1) I cant help you being in England. However a mechanical two wiper
pot. is easy. I trust you dont mean a stereo/dual ganged pot. but something
with different resistance/law characteristics. If you look at a pot. most have
a slot about thew size of a 4mm screw driver blade on the back of the spindle.
It is possible to take a second pot. and shape its spindle to fit this pot.
Glue them up and you have a composite pot.
