- A thoughtful wordsler, who shall remain nameless (doomo arigatoo
- gozaimasu!), has sent me a genuine Dirty Rice Mix New Orleans Style
- from Zatarain's, since 1889 the leader in authentic New Orleans
- cooking. I am now in a position to state authoritatively what's in
- dirty rice: rice, onions, salt, green bell pepper, hydrolyzed
- vegetable protein, spices, monosodium glutamate, caramel color.
- Accept no substitutes!

- As it happens, the nearby store where I buy most of my food offers a
- "Cajun-flavored" chicken. When the translation is finished and sent off
- to the publishers, I'll celebrate with a meal consisting of "Cajun
- chicken" and dirty rice. There isn't any Jax to be had here, so I'll
- have to compromise a bit. On the other hand Robicheaux, when he was an
- alcoholic, drank a lot of Wild Turkey, and we do have Wild Turkey.
