- Someone said that Kerala is more than food, places etc.. and said want to see
- more than just recipes, but I posting a recipe anyway.

- This is a recipe for quick & easy Lemon Rice. (Michael, even you should be
- able to make this without calling 911!!!). I'll post some more recipes later
- if I don't get flamed for this one. Enjoy.

- LEMON RICE
- ----------

- Rice (White) - 2 cups (cooked)
- Mustard (kaduku) - 1= teaspoon
- Urad Dal (oolunthu??) - 1= teaspoon
- Channa Dal (kadala parupu) - 1= - 2 table spoon
- (soaked atleast for an hour)
- Dried Red pepper (mulaku) - 3 to 6 (broken into 1" pieces)
- Asafoetida (kayam) - < teaspoon
- Turmeric (manjal) - < teaspoon
- Fresh grated coconut - = cup (optional)
- Water - = cup
- Vegetable Oil - < cup
- Salt - 3/4 teaspoon
- Juice from 1 fresh lemon or = cup lemon juice concentrate.

- Medium Onion - Chopped
- Green peas - 3/4 cup

- 1. Kepp the rice ready (must be pre-cooked and cooled).

- 2. Heat the oil (can be replaced by butter or Crisco) in a pan.

- 3. Add mustard, urad dal, red pepper (red pepper can be replaced by
- same amount of green chillies), asafoetida, turmeric (mix these
- ahead of time so you can drop all at the same time into the oil).
- Fry for about 1 minute in medium heat.

- 4. Drain the water from channa dal and add it to the oil. Fry until
- channa dal is reddish brown in medium-high heat.
- Reduce the heat to low.

- 5. Add lemon juice, water and salt. Bring it to boil in medium-high heat.

- 6. Add the lemon juice mixture in to the rice little at a time (depending
- on the lemon, sometime it can be too tart, so don't add all the sauce
- at one time).

- 7. Add the grated coconut. Mix well.

- 8. Leave it on the stove on low-heat until the rice is
- warmed (if the rice is very cold).

- If onion is used, it should be added (after adding the channa dal-step 4)
- to the oil and fried until the onion is transparent.

- Add the peas with the rice and follow step 7 & 8.
