One suggestion on one computer and a lot of students. We can upload an ASCII file and attach it to a message. That way a class of students can communicate with a basic word processor that saves in ASCII format then you can upload the messages. That way very little on line time is used.
I have very successfully used this with middle school students ages 11 -14. I agree that vague pen-pal messages are a bit weak. Our age students love surveys. Hope this has been a bit of help.
