  35. For the record, Guinness is delivered under nitrogen, not helium.  The main
  36. purpose is to get the legendary head on the beer.  I've never tried it at home,
  37. but I've never seen any of the bartenders at the local pub have a problem.
  38. I imagine it's similar to making a good cafe latte, once you've got it, it seems
  39. simple, but until then you know there's a trick.
