- Milady, I beg to differ on this point, small though it be. For me, at least,
- there is a great deal of difference between apple juice and apple cider (and
- I don't refer to the fermented ciders of England, nor distilled apple jack).

- To me, apple juice is that clear liquid, usually made from concentrate and
- laced so heavily with preservatives that you and I will be so much dust
- long before it goes bad. Apple cider, on the other hand, is pressed right
- from the apples and bottled. Mostly it is cloudy, and, if left alone in the
- refrigerator too long, will turn bad. It is the latter, IMHO that makes the
- best mulled cider. Of course, it occurs to me that you could have run across
- a distributor of cider that mislabels it juice. I will admit that I have seen
- this, though rarely, and perhaps this is what you meant.

- As for that wonderful fermented drink the English send over here, I will one
- day try my hand at laying in a batch. I've recently acquired a rather nice
- book on the subject of fermenting cider. Very concise, down to listing the
- various laws in this country for the manufacture of alchoholic beverages by
- the private individual.

- As a side note to the vintners on the Rialto, this is the perfect time to
- start a batch of long mead for the coming millenium. Seven years maturation
- is just about right, and your mead should be ready for opening New Year's
- Eve, 1999.
