- I coaxed this recipe from a friend who worked at a restaurant.

- Fry 6 to 10 diced pieces of bacon depending on how fatty it is
- until nearly done. Toss in three or four finely chopped
- scallions or green onions and fresh black pepper to taste.

- When the bacon is cooked to your liking and the onions tender
- add in equal proportions (I use 1 cup each) fresh brewed coffee
- (secret ingredient, shhhhh!) and red wine vinegar. Bring to a boil
- and serve over fresh spinach leaves which will wilt from the heat.

- The bacon grease serves as the oil in the dressing. Not for the
- faint of heart.
