- Over the weekend, I brewed up a batch of Zulu's Xmas Lager (Cat's Meow
- II, pg 167). Unfortunately, after getting my yeast starter going, and
- all my ingredients together (no small task what with the grated orange
- peel, etc), I discovered I had no gypsum. The recipe called for two
- teaspoons. As the yeast starter was ready (this was Saturday night),
- and no local store carried gypsum, I went ahead with the brew.

- My local water is towards the "soft" side. What adverse effect will the
- absence of gypsum have on this style of brew? Can I add some gypsum to
- the brew when I rack to the secondary (I sometimes top off the fermenter
- a little with water if the primary has blown off a lot of liquid)?
