- I used 2112 to make a fairly light bodied steam (OG=38) and it finished up
- very well. It did take rather longer to ferment out. I understand that the
- optimal temperature for this yeast is below 65F, I exceeded that off and on
- but both primary and secondary took more than a week, secondary closer to
- two, and conditioning in the bottle was much longer than a week; full
- carbonation took over three weeks.
