- I find that drying affects potency severely. After a couple of weeks, it
- drops off drastically. The black mushy stuff is the result of enzyme
- activity. You can prevent it by freeze-drying or blanching the mushrooms
- before freezing. Blanching requires no special equipment. It doesn't
- affect the potency. The mushrooms will shrink somewhat, and take on a
- blander flavor, but they can be drained, frozen (heat sealed in small
- quantities or individually), and kept for a long time.
