- From my Webster's: "cured, smoked pork taken from the loin in a boneless strip
- and having a hamlike flavor." It's not unlike thinly sliced ham, for the most
- part. Amusingly, it seems (from my experience on a trip to Alberta) that
- Canadian bacon was fairly unknown (at least under that name) in Canada.
