Now I've got a California Chardonnay here which has the unmistakable flavors of having spent some time maturing in a new oak barrel. It's got a creamy buttery vanilla flavor to it and there's a small touch of cinnamon spice as well. Now those are the classic flavors of oak maturing for a red wine as well as for a white.
