ARTICHOKES WITH DIPPING SAUCE
2 medium artichokes
1 halved lemon
2 T. unsalted butter
1 t. fresh parsley
1 t. fresh chives
pinch pepper
Cut artichokes stems flush with bottom leaves and
remove small dark leaves. Cut off top 1 inch of cone and trim
points from all leaves. Rub cuts with lemon halves. Place in
plastic bag and seal. Microwave on high for 10 minutes. Let
stand 5 minutes. Melt butter and add herbs and pepper. Remove
artichokes from bag and serve with dipping sauce.
