3 lb Beef, cubed
2 tsp Cooking oil
1 tsp Salt
1 cup Water
4 ea Carrots, diced
2 med Onions, chopped
4 med Potatoes, cubed
1 Tbsp Parsley flakes
DIRECTIONS
------------------------------------------------------------
Brown beef in the cooking oil in the open oven; then add salt and
water; cover and cook 30 minutes. Add carrots and onions and cook 30
minutes. Add potatoes and parsley and cook 30-40 minutes more. Cook
over low to medium heat fire; add water to retain about one inch of
liquid in oven.

INGREDIENTS
5 lb Country style pork ribs
1 tsp Salt
1 ea Lemon, thinly sliced
1 ea Onion, thinly sliced
BBQ sauce
DIRECTIONS
------------------------------------------------------------
Place ribs in a large Dutch oven or kettle with enough water to cover.
Add salt, lemon, and onion, and cook for 45 to 60 minutes. Drain ribs
thoroughly, discarding lemon and onion slices. Brush ribs well with
BBQ sauce and place over slow coals. Turn every 10 minutes, brushing
frequently with BBQ sauce. Cook for 35 to 50 minutes, or until done
and well coated with the sauce. Serve with extra sauce.

INGREDIENTS
4 ea pork chops, trimmed of fat
1 Tbsp oil
1 tsp salt
1 Tbsp chili powder
1/4 cup long-grained rice
1/2 cup chopped onions
1/4 cup chopped green peppers
1 cup (1 lb. 4 oz.) whole tomatoes
5 ea green pepper rings
1/2 cup grated cheddar cheese
DIRECTIONS
------------------------------------------------------------
In a large Dutch oven, slowly brown the chops in heated oil. Drain
off excess oil. Sprinkle chops with salt, chili powder and black
pepper. Add the rice, onions and chopped green peppers. Pour in the
tomatoes with liquid, breaking the tomatoes into pieces with a wooden
spoon. Cover and bring to boiling over high heat. Reduce heat and
simmer 35 to 40 min., stirring occasionally. Add the pepper rings and
cook 2 min. longer or until the rice and meat are tender. Sprinkle
with the cheese. Transfer to a serving platter, arranging the chops
and pepper rings over the top.
TIPS: You may use precooked rice if you wish, adding it during the
last 10 min. of cooking.
The addition of chili powder imparts a tantilizing flavor to this
one-pot pork chop dish. It is easy to prepare and yet provides
substantial fare fit for family or friends with its satisfying blend
of meat, rice and vegetables.
Good served with: Fresh green salad, crusty French bread, and
peach or apple pie.

2 1/2 lb Minute rice
5 can Cream of mushroom soup
5 can Onion soup in beef stock
1 to 2 cans mushrooms (optional)
DIRECTIONS

Brown pork chops in Dutch oven. Remove and place them on the lid.
Mix rice, soups, mushrooms and 3 cans of water in Dutch oven. Lay the
browned pork chops on top of this mixture. Bake in Dutch oven 45
minutes. May also use chicken or steak.

INGREDIENTS
1 1/2 lb Ground beef
1 pkg Pizza mix
1/2 lb Cheese, grated
Olives, sliced
DIRECTIONS

Brown beef in open skillet and set aside to remain warm. Mix pizza
dough as directed and divide into 8 equal portions. Form these
portions into crust pieces about the size of doughnuts but of size
enough to allow placing all 8 crusts into two ovens.
Place the ground beef and cheese on the crusts; pour tomato sauce
from pizza mix on each crust; then add sliced olives on top. Bake as
directed for about 25-30 minutes.
VARIATIONS:
1. Use sausage instead of beef.
2. Place chopped pieces of pimento or parsley on top of sauce.

1 can Large sliced peaches
1 pkg White cake mix
Butter
Cinnamon
DIRECTIONS

When oven is preheated, pour the whole can of peaches and juice
into oven. Then add the dry cake mix on top of the peaches. Place
several pieces of butter on top, and sprinkle with cinnamon over all.
Place lid on oven and bake about 45 minutes. Recipe will give a layer
of peaches with a cake covering. VARIATIONS: 1. Stir the cake mix and
peaches when placed in oven to provide a more spongy layer of cake. 2.
Use canned apples instead of peaches, and add 1 tbsp. cinnamon and 1
tsp. allspice to the apples. 3. Use canned cherries instead of
peaches, and add more sugar with the cherries. 4. Instead of the white
cake mix, use a yellow or spice cake mix.

INGREDIENTS
2 lb Boneless chuck roast
1 Tbsp Vegetable shortening
1 large Onion, sliced
4 large Carrots, in 1" pieces
4 large Potatoes, peeled, quartered
Seasoning salt, pepper
Garlic powder (optional)
DIRECTIONS
------------------------------------------------------------
Put the oven on 30 coals. Melt the shortening. When the shortening
is very hot, put in the chuck roast and brown it well on one side.
Turn the meat over, sprinkle it with pepper, seasoning salt and
garlic. Add sliced onion.
Place the lid on your oven and put 18 to 20 briquettes on the lid.
Let the meat cook for an hour or so. Add briquettes as needed to
replace those that burn down.
Add the vegetables. Cook for 25 to 30 minutes or until the carrots
are tender.
