A person who eats no foods of animal origin,
including eggs, milk, and honey.
Theoretically vegans are at risk of a
deficiency of vitamin B12, which is needed by
the body for blood-cell and nerve formation
(see vitamin), but it can be absorbed from
fortified soya products and yeast extracts.
Vegans must ensure an adequate supply of
calcium from nuts and soya products, and
vitamin D from sunshine and margarine, as
these are normally obtained from dairy
products in the diet.
