  1. Cacao is a tropical American evergreen tree
  2. Theobroma cacao of the Sterculia family, now
  3. also cultivated in W Africa and Sri Lanka. 
  4. Its seeds are cocoa beans, from which cocoa
  5. and chocolate are prepared. 
  6. The trees mature at five to eight years and
  7. produce two crops a year.  The fruit is 17-25
  8. cm (6½-9½inches) long, hard and ridged, 
  9. with the beans inside.
  10. The seeds are called cocoa nibs; when left
  11. to ferment, then roasted and separated 
  12. from the husks, they contain about 50% fat,
  13. part of which is removed to make chocolate
  14. and cocoa. The Aztecs revered cacao and made
  15. a drink for the nobility only from cocoa 
  16. beans and chillis, which they called 
  17. chocolatl. In the 16th century Spanish
  18. traders brought cacao to Europe.  It was used
  19. to make a drink, which came to rival coffee
  20. and tea in popularity.
