    hi puffin
went to beijing and shanghai last september. if you
take a taxi from the bj airport do not accept an offer
from the touts inside the building. go directly outside
and join the taxi queue the the left of the entrance.
i stayed at the holiday inn downtown and the fare was
about 90 or 100 yuan (about 8 or 9 us $) you will have to
pay at the toll both on the freeway so don't be alarmed also
make sure the driver puts the flag up on the meter!!.
email me if you need anymore info. happy travels.

I am not sure what time the airport buses stop but they do
stop before the planes do. I arrived in Beijing after
midnight - there was no bus - no left lugggage facility
(as I was catching a connection the following day) and a
just 4 mostly creepy looking taxi drivers.
I got ripped off - $15 US I knew it at the time but there
was nothing I could do. I opted for only one that did not
look especially creepy. I made the mistake of showing them
the name of the hotel and not just the street, suburb. They
charged me more because they thought it was an expensive
hotel - even though the price I paid in AUstralia to stay
there was a fraction of the apparent going rate.
On the way there he tried to jack up the price and I told
him truthfully I was coming to be a teacher in his country
and that I was being paid local wages and was not a wealthy
foreigner. After this he did not insist on a higher price -
    he also paid the toll.

Yes it's best to get one from the rank as stated above, but that doesn't mean they won't try and rip you off. Either refuse to pay more than half of what they initially ask for or insist they put it on the meter. They have to take you, and in theory it's the law that they must use the meter. Prices vary. All start with flat fee of 10 Yuan, and first 2 km (I think) is included then it racks up at either 1.2, 1.6 or 2 Yuan / km. At the airport taxi rank you just have to take the next one that comes along so could end up in the most expensive, it's beyond your control.
The drivers like coming to the airport as there are rich pickings to be had, and as there are so many of them they often have to queue for ages. If they then get assigned a foreigner who refuses to be ripped off, they can (it's rare though) get extremely abusive. I had a guy ask for 200 Y for a trip I knew should only be about 50 and insisted on the meter; he was hopping mad and caused a very ugly scene. The toll on the airport road is 15Y.
