LEMON MERINGUE PIE

Serves: 8
1 Pastry for one-crust pie
LEMON FILLING --------------------------------------------------------------
1/4 Cup Cornstarch 1/2 Cup Lemon Juice
3 T Flour 1 3/4 Cup Sugar
1 T Butter 1/4 t Salt
4 Egg yolks, slightly beaten 1 T Grated lemon peel
MERINGUE ---------------------------------------------------------------------
4 Egg whites
1/4 Cup Cream of tarter 1/2 Cup Sugar

MAKE LEMON FILLING:
In medium saucepan, combine cornstarch, flour, 1 3/4 cups sugar
and the salt, mixing well.
Gradually add 2 cups water, stirring until smooth.
Over medium heat, bring to boiling, stirring occasionally.
Boil one minute, until shiny and translucent.
Quickly stir some of hot mixture into yokes. Pour back into hot mixture,
stir to blend.
Return to heat, cook over low heat 5 minutes, stirring occasionally.
Remove from heat, stir in lemon juice, lemon peel and butter.
Pour into pie shell. Preheat oven to 4OOF

MAKE MERINGUE:
In medium bowl, with mixer at medium speed, beat whites with cream of
tarter until frothy.
Gradually beat in sugar, 2 tablespoons at a time, beating after each
addition. Beat at high speed until peaks form when beater is slowly raised.
Spread meringue over lemon filling carefully sealing to edge of crust and
swirling the top decoratively. Bake 7 to 9 minutes, or until the meringue
is golden brown. Let cool completely on rack - 2 1/2 to 3 hours.
Serves 8. Cut with a wet knife.

QUICHE LORRAINE

Serves: 8
1 Pastry for one-crust pie
QUICHE FILLING ---------------------------------------------------------------
12 Bacon slices, about 1/2 lb. 1 Cup Natural Swiss cheese, shredded
1/2 Cup minced Onions 4 Eggs
2 Cups whipping cream 3/4 t Salt
or light cream 1/4 Cup Sugar
1/8 t Cayenne Pepper
Cook Bacon crispy and crumble into small pieces.
Pre heat oven to 425 degrees

Place bacon, cheese and onions in pastry shell.
Beat eggs slightly. Beat in remaining ingredients.
Pour creamed mixture into pastry shell.
Bake 15 minutes.
Reduce oven temperature to 300 degrees and
Bake 30 minutes longer or until a knife inserted comes
out clean.
Let stand for 10 minutes before cutting.
Serve in wedges.

CEASAR'S SALAD

Romaine Lettuce (torn)
6 T Olive Oil
1 1/2 t dry Mustard
crushed Garlic, to taste
crushed Anchovies, to taste
Croutons
1 T Worcestershire sauce
2 t Lime juice
1 egg, 3 min., crushed.

FRIDAY BANQUET PIE

Serves: 6
2 beaten eggs
1/2 Cup milk
1 T butter, melted
1/4 Cup chopped onion
2 T minced parsley
3/4 t basil
1/4 t salt
1 - 1 lb can (2cups) salmon, or two 6 1/2 - or 7 ounce cans tuna
1 stick packaged pastry mix

Combine eggs, milk, butter, onion, parsley, and seasonings.
Break salmon into chunks, removing bones and skin.
Stir salmon into egg mixture.
Pour into well-greased 8-inch pie plate.
Prepare pastry mix according to package directions. Roll 1/8 inch thick.
Cut 8-inch circle, then cut circle into 6 wedges. Arrange atop pie.
Cook at 325 degrees until crust is golden brown
Serve immediately.
Spoon chilled cucumber sauce or tarter sauce over hot wedges.

ZUCCINI CAKE

3 C grated zuccinni
4 eggs
1 1/2 C corn oil
1 T vanilla
--------------------------- Beat above ingredients together, then add
3 C sugar
--------------------------- Sift and add
3 C flour
2 t nutmeg
2 t cinnamon
2 t baking powder
1 t baking soda
1 1/2 t salt
--------------------------- Add
1 C chopped walnuts

Grease and flour cake pan
Bake at 350 degrees for 1 hour
CREAM CHEESE FROSTING --------------------------------------------------------
1 - 3 oz cream cheese
1/4 stick butter
2 Cup powered sugar
1 t vanilla
