When popcorn pops, it's basically a small but violent steam
explosion. The moisture in the starchy part of the kernel
reaches the boiling point and then continues to superheat as the
pressure builds inside the hard casing... until it finally
ruptures the casing with a POP!
A hard casing is needed to confine the high pressure
steamy-starch mixture long enough to cook the starch and allow
pressure to build. You get "pooped corn" if the steam is
allowed to leak out faster than it can build.
Notice also that popcorn tends to be much "rounder" than sweet
corn. The round geometry of the kernel helps contain a higher
pressure without rupture (round is stronger than square for
containing pressure because the stress is more evenly
distributed over the surface material). In addition, we want a
rapid catastrophic failure of the casing for a nice clean pop.
This is one instance where "leak before break" is not desired.
Popcorn is a new world product (from the Americas).
Thousand-year-old kernels of popcorn have been found in Utah and
Peru.
