  13.        3        Tbsp  Tapioca - quick cooking                           
  14.        2        cup   Milk - scalded                                    
  15.        1/4      tsp   Salt                                              
  16.        1/3      cup   Sugar                                             
  17.        3        Tbsp  Corn syrup - light                                
  18.        2        Tbsp  Sugar                                             
  19.        2        ea    Egg whites                                        
  20.        1        cup   Cream - whipped                                   
  21.        1 1/2    tsp   Vanilla                                           
  22.        1        cup   Coocoanut - shredded - toasted - crumbled

  24.     DIRECTIONS  ------------------------------------------------------------

  26.     Add tapioca to milk, cook in double boiler 15 minutes, or until       
  27.     tapioca is clear and mixture thickened, stirring frequently. Strain   
  28.     hot mixture, stirring through very fine sieve, add salt, 1/3 c. sugar 
  29.     and corn syrup. Stir until sugar is dissolved. Cool. Add 2 T. sugar to
  30.     egg whites and beat until stiff. Fold in tapioca mixture. Fold in     
  31.     cream, vanilla and cocoanut. Turn into freezing tray of refrigerator, 
  32.     freeze as rapidly as possible.
