The author, a homebrewer since 1975, traces the
history of this the dominant beer style in the world,
back to its origin in Bohemia around 1842. Numerous
items are covered in detail, including profiles of
Pilsner Urquell, German, Dutch, and Scandinavian
Pilseners, ingredients, specific brewing methods, and
several tried and true recipes that includes all
grain as well as extract/syrup variations.

This book delves into the history of one of the
world's largest beer styles, and includes an in depth
discussion of the brewing techniques used in making
this style and its variations (Pale Ales, Bitter
Ales, and India Pale Ales), ingredients, serving
systems, and recipes for the home brewer to use to
produce a true "Pale Ale" in it's original flavor,
color, and aroma profile.

manual tells you how, with photos and the years of
experience of the author.

An introduction to making lager beers in your home,
including recipes for over 30 beers. Very good basic
information on the lagering process, including a
description of the way commercial breweries do it.

Papazian, Charlie. 1984.
"The Complete Joy of Home Brewing." Avon Books,
NY, NY 10016. 332pp., Intro. by Michael Jackson.
Well written and illustrated work by the president of
the American Homebrewers Association, and the editor
of zymurgy magazine, this book explains all it, with
step-by-step instructions for the beginner as well as
the advanced brewer.
In addition to discussing the details in easy to
follow fashion, Charlie includes numerous recipes
that help the home brewer to start out easy, and
progress through the more complicated "all grain"
brews. A fine addition to any home brewing library,
the recipes alone are worth the price of the book.

"The Big Book of Brewing." Amateur Winemaker
Publications, Herts, England. 257pp.
Dave covers a lot of ground in this work, but the
sections on mashing, as well as several of his
systems for "working the numbers" are quite good for
beginner and advanced home brewer alike.
Dave's system for calculating the amount of hops to
use to achieve a desired bitterness has been
incorporated into the Homebrew Bittering Units (HBU)
option in the α-Acids section of EZBREW.

Packed with the chemistry, physiology, and biology
of brewing lager beer, complete with conversions,
tables, charts, and a description of decoction
mashing that can be followed by the average home
brewer. If you want to get a single reference on
lager, give this one serious consideration!

Written by the editor of the "Amateur Winemaker and
Home Brewer", this book contains a great history of
ales, beers, and the like, as well as many ideas on
creating the best beer possible.

"Brewing Quality Beers. The Home Brewer's Essential
Guidebook". Joby Books, Fulton CA 73pp.
Fifth printing of this useful guide to many styles of
beers, from lagers through barley wines and imperial
stouts. Written by one of America's leading teachers
of the homebrewing art, this book is an excellent
choice for the beginner.

Jackie, a recognized beer judge and one of the
managing partners of Bacchus & Barleycorn of Merriam,
Kansas, presents information in this article that
serves as the mathematical basis for the IBU
(International Bittering Units) Option under the
α-Acids section of EZBREW.
For anyone who is in the least bit interested in hops
and bitterness in beer, it would be well worth the
time to digest the information in this article, as
well as the entire 1990 Special Issue of zymurgy.
