Cook sliced vegetables with ham bone in stock until done. Remove bone and put soup through a blender or puree through a fine sieve. Season with salt and pepper, and chill. Just before serving add chilled cream, garnish with sprigs of water cress, and serve cold.{$7e}(Original recipe for 6)
