.RH REC.FOOD.RECIPES-#157 CHICKEN-NOODL1 M "11 Jul 91" 1991
.RZ "CHICKEN IN RICE NOODLES"
.KY CHICKEN VIETNAMESE
Here's a sort-of-Vietnamese chicken in rice noodles dish that I invented. I've
served it to normally finicky eaters with no complaints. As given, this is
only mildly spicy. I usually put a lot more hot stuff in it for myself.
.IH "Serves 4-5"
.IG "1 lb" "uncooked chicken" "450 g"
.IG "1 lb pkg" "vermicelli-size rice noodles" "450 g"
.IG "\(12 cup" "chopped cilantro"
(fresh, not dried)
.IG "\(12 cup" "chopped green onion"
.IG "1/3 cup" "ground peanuts"
.IG "\(12 cup" "french-fried onion"

.IG "4 cloves" "garlic"
.IG "1 Tbls" "chili oil or red pepper flakes"
(optional)
.PH
.SK 1
Cut up chicken into bite-size pieces, then marinate for 45-60 minutes in a
mixture of the marinade ingredients.
.SK 2
Cook rice noodles and drain them.
.SK 3
Dump the chicken and marinade into large skillet and stir on high heat until
chicken is cooked.
.SK 4
Mix cooked chicken and marinade into the noodles. Also mix in cilantro, green
onions and peanuts.
.SK 5
Garnish with french-fried onion. If you mix this in instead of adding it on
top, the onions get soggy too quickly.

.RH REC.FOOD.RECIPES-#157 ICECREAM-FRUIT Dl "12 Jul 91" 1991
.RZ "FRUIT ICE CREAM"
.KY NO-BAKE
I love homemade ice cream and mostly use my mother-in-law's recipe, which is
extremely easy.
.IH
.IG "1-2 cans" "condensed milk"
(NOT sweetened milk like Eagle Brand)
.IG "6 oz" "sugar" "175 g"
.IG "1 pkg" "French Vanilla Instant pudding"
or use pudding to match fruit, like Banana Cream
.IG "" "fruit"
(bananas are great but works with any kind. For bananas, I use 3-4 medium
sized ones).
.IG "" "milk"
to fill
.PH
.SK 1
In a blender put some fruit, condensed milk/regular milk, some of the pudding
and some of the sugar and blend well. Pour into freezing can. Repeat until all
ingredients used. Freezing can should be filled somewhat above fill line. Put
can in refrigerator for at least an hour. Then proceed as normal to make ice
cream.
.NX
I use 1 can condensed milk and 2% milk. If you need to add more milk, put it
in blender for a few seconds to foam up. For richer ice cream, use 2 cans
condensed milk and whole milk.

too sweet)
.IG "2 cans" "condensed milk"

.IG "" "milk"
to fill (I use 2%)
.PH
.SK 1
