Title: Super Chocolate Chip Cookies

3/4 c Butter (1 1/2 sticks) 1 c Dark brown sugar,packed
1/2 c Granulated sugar 1/4 c Water
1 ea Large egg 2 t Vanilla extract
1 c All-purpose flour,after sift 1 t Salt
1 t Cinnamon 1/2 t Baking soda
1/2 t Cloves 8 oz Semisweet chocolate chips
1 c Pecans or walnuts,broken 3 c Quick cooking oats
Preheat oven to 350 degrees with the rack in the center position of the
oven.Grease three cookie sheets with vegetable oil.Either by hand or in an
electric mixer on low speed,cream butter,sugars,water,egg and vanilla.Add
the flour,salt,cinnamon,baking soda,cloves,chocolate chips,cloves,nuts and
oats.Using a soup spoon to form mounds set 1" apart on cookie sheets.Bake
12 to 15 minutes,turning the rack once back to front during the
baking.Remove the cookie sheet immediately to cool on a rack.Makes about
50 cookies.

2/3 c Brown sugar,packed 2/3 c Shortening
1 1/3 c Molasses 2 ea Eggs
5 1/2 c All-purpose flour 4 t Ground cinnamon
2 t Ground ginger 2 t Baking soda
1 t Salt
Mix brown sugar,shortening and molasses.Stir in remaining
ingredients.Cover and refrigerate at least 1 hour.Heat oven to 375
degrees.Roll dough 1/2" thick on a lightly floured cloth covered board.Cut
into desired shapes with cookie cutters.Place about 1" apart on lightly
greased cookie sheets.Bake until no indentation remains when touched,about
7 to 8 minutes;cool.Frost and decorate as desired.Makes 5 dozen 3"
cookies.

24 ea Graham cracker squares 1/2 c Packed brown sugar
1/2 c Butter or margarine 1/2 t Vanilla extract
1/2 c Chopped pecans
Heat oven to 350 degrees.Arrange graham crackers in a single layer in an
ungreased jelly roll pan (15 1/2 x 10 1/2 x 1").Heat brown sugar and
butter to boiling;boil and stir 1 minute.Remove from heat.Stir in
vanilla.Pour over crackers;spread evenly.Sprinkle with pecans.Bake until
bubbly,8 to 10 minutes.Cool slightly.Cut into bars (2 1/4 x 1 1/4").Makes
about 4 dozen.

Title: Cranberry Glazed Chef's Prime Pork Roast

4 lb Boneless pork rib end roast 2 t Cornstarch
1/8 t Cinnamon 1/8 t Salt
4 T Orange juice 16 oz Can whole cranberry sauce
Combine cornstarch,cinnamon and salt in a small saucepan.Stir in orange
juice and cranberry sauce.Cook and stir over medium heat until
thickened.Set aside.
Place pork in shallow pan and spoon over about 1/2 cup cranberry
sauce.Roast in a 325 degree oven for 45 minutes to an
hour,basting,occasionally with additional sauce,until meat thermometer
reads 155 to 160 degrees.Let rest 10 minutes before carving.Serve with
additional cranberry sauce.

Title: Peachy Smoked Pork Roast

2 lb Boneless pork loin,roll&tied 1 T Salt
1/2 t Ground pepper 1 t Ground ginger
2 T Cooking oil 2 T Cider vinegar
1/2 c Brown sugar 3 T Chili sauce
29 oz Can peach slices in syrup
In a blender,combine salt,pepper,ginger,oil,vinegar,brown sugar,chili
sauce and undrained peaches.Blend until smooth.Place pork loin in a heavy
plastic bag,pour half of peach sauce over it;refrigerate
,covered,overnight.Refrigerate remaining peach sauce.
Prepare grill by arranging a drip pan surrounded by medium hot coals or
medium temperature on a gas grill.Add hickory chips,dampened with water,to
heat source.Place pork on grill over drip pan.Baste often with marinade
until internal temperature reaches 155 degrees,about 60 minutes.Let stand
10 minutes.allowing internal temperature to rise to 160 degrees.Slice
thinly and serve with reserved peach sauce that has been heated.

Title: Raspberry Stuffed Pork Chops

4 ea Boneless loin chops,1" thick 4 T Raspberry jam
1/16 c Dried apricots,sliced 1 T Cooking oil
4 T Cider vinegar 2 T Honey
4 T Orange juice 1 T Dijon style mustard
Cut a deep pocket in one side of each chop.Mix together jam and
apricots,divide equally among chops and stuff each pocket with jam
mixture.Heat oil in a heavy skillet over medium high heat.Brown chops on
one side,about 2 to 3 minutes.Turn chops.Combine remaining ingredients and
add to pan.Lower heat,cover and barely simmer 8 to 10 minutes.

1 lb Boneless pork cutlets,1/4" 1/2 c All-purpose flour
2 T Butter,divided 1/4 c Honey
1/4 c Chopped pecans
Dredge cutlets in flour,shaking off excess.Heat one tablespoon butter in
a heavy skillet over medium heat.Add cutlets and brown on both sides,about
5 to 6 minutes.Stir together remaining butter,honey and pecans,add to
skillet and stir gently.Cover and simmer,gently for 7 to 8 minutes.Remove
cutlets to serving platter,pour sauce over all.

1 T Dark Karo syrup 2 t Baking soda
1 ea Egg,beaten 3 t Cinnamon
2 t Ground ginger 1 t Ground cloves
3 1/4 c Sifted flour 1/2 c Orange juice,fresh or frozen
Cream butter and sugar together.Mix all ingredients together thoroughly.
Roll out and cut in desired shapes with cookie cutters.Bake on a buttered
baking sheet @ 350 degrees for about 10 minutes.Hints:Put a piece of wax
paper over bread board and use a cloth on rolling pin.Use flour on paper
and then you can roll them out thinner and they will not stick.After
mixing dough,put in refrigerator until chilled,at least one hour.

1/4 t Salt 1 ds White pepper
1 c Milk 4 oz Sharp American cheese,shred
4 c Hot sliced cooked potatoes 1/2 c Fine bread crumbs
1 T Butter or margarine,melted
Melt 2 tablespoons butter in a saucepan over low heat.Blend in
flour,salt and a dash pepper.Add milk all at once.Cook,quickly,stirring
constantly,until mixture thickens and bubbles.Remove from heat.
Blend white sauce and cheese;combine with hot sliced potatoes.Pour into
a 1 quart casserole.Toss crumbs with melted butter and sprinkle atop of
potatoes.Bake @ 350 degrees for 20 to 25 minutes or until browned.

In a small bowl,combine flour and baking soda;set aside.In a medium
bowl,using an electric mixer,cream butter,brown sugar and vanilla.Beat in
eggs,one at a time.Stir in flour mixture.Mix in walnuts,apples and
raisins.Drop by tablespoons onto greased baking sheets.Bake @ 350 degrees
for 12 to 15 minutes.Cool on wire racks.

1 c Fresh or frozen cranberries 1/2 c Chopped nuts
1 T Grated orange peel 2 c All-purpose flour
1 c Sugar 1 1/2 t Baking powder
1 t Salt 1/2 t Baking soda
2 T Shortening 3/4 c Orange juice
1 ea Egg,well beaten
Preheat oven to 350 degrees.Generously,grease and lightly flour 9 x 5 x
3" loaf pan.Coarsely chop cranberries.In a bowl,mix together
flour,sugar,baking powder,salt and baking soda.Cut in shortening.Stir in
orange juice,egg and orange peel,mixing just until moisten.Fold in
cranberries and nuts.Spoon into prepared pan.Bake 60 minutes or until a
wooden pick inserted in center comes out clean.Cool on rack 15
minutes.Remove from pan.Cool completely.Wrap and store overnight.Makes 1
loaf.

1/2 c Butter 1/2 c Light brown sugar,packed
6 T Orange marmalade 3/4 c Small curd cottage cheese
2 ea Eggs 1 x Grated orange rind,1 orange
1/4 c Orange juice 3 3/4 c Flour
1 T Baking powder 1 t Baking soda
1/2 t Salt 1/2 t Cinnamon
1/4 t Ginger 1/4 t Allspice
1 c Cranberries,coarsely chopped 1 c Coarsely chopped nuts
Grease a 9 x 5" loaf pan.Set aside.Combine raisins and brandy.Set
aside.Cream butter and sugar until light and fluffy.Stir in marmalade.Beat
in cottage cheese,eggs,orange rind and orange juice.Measure flour and sift
with baking powder,soda,salt,cinnamon,ginger and allspice.Stir the flour
mixture into cottage cheese mixture.Fold in raisins and brandy,cranberries
and nuts.Spoon into loaf pan.Bake @ 350 degrees for 1 1/2 hours.Cool in
pan 10 minutes before removing to cake rack for cooling.Makes 1 loaf.

dry ingredients;add,alternately,with sour cream mixture to sugar
mixture.Bake in a 9 x 5" loaf pan @ 350 degrees for at least 50
minutes.Test for doneness with a toothpick.Makes 1 loaf.

Cream butter and sugar.Add egg yolks and mix.Sift dry
ingredients,then;add raisins to flour mixture.Alternate pumpkin and flour
mix.Beat egg whites until stiff,then fold into batter.Fill 8 - 2 lb. cans
2/3 full.Bake 1 hour @ 350 degrees.

1/4 t Baking powder 1/2 c Coarsely chopped walnuts
1/2 c Raisins
Mix just until all ingredients are blended and moist.Bake in a lightly
oiled 5 x 9" loaf pan for 1 1/2 hours @ 350 degrees.Let bread cool for 1/2
hour before removing from pan.Makes 1 loaf.
