Title: Blueberry Quick Bread

5 c All-purpose flour 1 1/2 c Sugar
2 T Baking powder 1/2 t Salt
3/4 c Butter (1 1/2 sticks) 1 1/2 c Walnuts,chopped
4 ea Large eggs 2 c Milk
2 t Vanilla extract 2 c Fresh or frozen blueberries
If using frozen blueberries,do not thaw.Preheat oven to 350
degrees.Grease and flour a 10" Bundt pan.In a large bowl,mix
flour,sugar,baking powder and salt.With a pastry blender or 2 knives used
scissor fashion,cut in butter until mixture resembles fine crumbs.Stir in
chopped walnuts.In a small bowl,beat eggs slightly.Beat in milk and
vanilla until well mixed.Stir into flour mixture just until flour is
moistened.Gently,stir in blueberries.Spoon batter,evenly,into Bundt pan.
Bake bread 1 hour and 20 minutes or until a toothpick inserted in center
comes out clean.Cool in pan on wire rack for 10 minutes.Remove from pan
and finish cooling on wire rack.

Title: Banana Pecan Bread

1 3/4 c All-purpose flour 1 t Baking powder
2/3 c Sugar 1/4 t Baking soda
1 c Mashed bananas (2 large) 1/2 c Coarse chopped pecans
1 t Grated lemon peel 2 ea Large eggs,slightly beaten
Preheat oven to 350 degrees.Grease a 9 x 5" loaf pan.In a large
bowel,mix first 5 ingredients.With pastry blender or 2 knives used scissor
fashion,cut in butter until mixture resembles coarse crumbs.Stir in
bananas,pecans,lemon peel and eggs just until flour is moistened.Spoon
better,evenly,into loaf pan.Bake bread 55 minutes or until toothpick
inserted into center of bread comes out clean.Cool bread in pan on wire
rack 10 minutes.Remove from pan and finish cooling on wire rack.

4 1/2 t Baking powder 1/2 t Salt
4 oz Can walnuts (1 cup),chopped 4 ea Large eggs
2/3 c Salad oil 2 c Shredded zucchini
2 t Grated lemon peel
Preheat oven to 350 degrees.Grease two 8 1/2 x 4 1/2" loaf pans.In a
large bowl,mix flour,sugar,baking powder,salt and chopped walnuts.In a
medium bowl,beat eggs slightly.Stir in salad oil,shredded zucchini and
grated lemon peel.Stir into flour mixture just until flour is moistened.
Spoon batter into pans.Bake 1 hour or until toothpick inserted in center
comes out clean.Cool bread in pans on wire racks 10 minutes.Remove from
pans and finish cooling on wire racks.

Title: Peanut Butter Bread

3/4 c Chunky(smooth) peanut butter 1/4 c Butter(1/2 stick),softened
2 c All-purpose flour 1/2 c Sugar
2 t Baking powder 1/4 t Salt
1 ea Large egg 1 1/4 c Milk
1 T Grated orange peel
Preheat oven to 375 degrees.Grease a 9 x 5" loaf pan.In a small
bowl,with fork,beat peanut butter and butter until light and fluffy.In a
medium bowl,with fork,mix flour,sugar,baking powder and salt.Add peanut
butter mixture and mix until mixture resembles coarse crumbs.In a small
bowl,with fork,beat egg slightly.Stir in milk and orange peel.Stir into
flour mixture just until flour is moistened.Pour mixture into pan.Bake
bread 1 hour or toothpick inserted in center comes out clean.Cool in pan
on wire rack 10 minutes.Remove from pan and cool completely on wire rack.

2 ea Beef rib eye steaks,1/2" 1 x Salt
2 T Butter or margarine 1 ea Small shallot,fine chopped
1/4 c Dry sherry 2 T Brandy,slightly warmed
On a cutting board,pound the steaks until 1/4" thick.Sprinkle the meat
lightly with salt.In a 10" skillet over medium heat or in an electric
skillet at high heat (at the table),in hot butter,cook steaks just until
browned,turning the steaks once.Stir in shallots and cook,stirring,until
tender,about 1 minute.Add sherry and heat.Pour brandy over steaks;with a
match,set aflame;turn steaks once or twice until flaming stops.Serve
immediately.

2 T Red wine vinegar 1 T Chopped pimento
1/2 t Sugar
Rinse Bibb lettuce heads well under running cold water to remove all
sand;drain.Cut heads lengthwise in half;arrange 2 halves on each salad
plate;refrigerate.In a small bowl,mix oil with remaining ingredients.To
serve,spoon dressing over lettuce.

1 c Milk 3 ea Eggs
1 1/2 c Cubed Swiss cheese 1 T All-purpose flour
1 T Salad oil 1 t Dried parsley
1 ea Small onion,chopped 1/4 c Sesame seeds
Measure milk,eggs,cheese,flour,oil and parsley into a blender.Blend
until mixture is smooth.Pour into buttered pie dish.Sprinkle onion and
sesame seeds on top.Bat at 300 degrees for 1 hour.This can be frozen after
baking and heated to serve.

Title: Spicy Glazed Pork Loin

2 ea Cucumbers 1 x Salt
3 lb Boneless pork loin roast 1/4 t Black pepper
10 oz Jar black cherry preserves 1/4 c Red wine vinegar
2 T Light corn syrup 1/4 t Ground cinnamon
1/4 t Ground allspice 1 x Cilantro sprigs for garnish
Cut cucumbers,crosswise,into 1/4" slices.In a large bowl,toss cucumbers
with 1/2 tsp. salt;cover and refrigerate while preparing pork roast.
Trim fat from pork roast.Sprinkle roast with black pepper and 1/2 tsp.
salt.Place pork roast on rack in open roasting pan.Insert a meat
thermometer into center of roast.Roast in a 325 degree oven about 1 hour
or until meat thermometer reaches 160 degrees (25 to 30 minutes per
pound).
After meat has roasted about 45 minutes,in a 1 quart saucepan over
medium heat,cook black cherry preserves,vinegar,corn
syrup,cinnamon,allspice and 1/4 tsp. salt to boiling;boil 2
minutes.Occasionally,brush roast with some preserve mixture to glaze
roast.When roast is done,place on cutting board;let stand 10 minutes for
easier slicing.Stir pan juices into any remaining preserve mixture.
To serve,with hand,press out liquid from cucumbers.Arrange slices
around edge of warm platter.Cut pork loin,crosswise,into 1/4"
slices;arrange pork slices on center of platter.Garnish with cilantro.Heat
preserve mixture;pour into small pitcher or sauce boat to serve with
roast.

Title: Peppery Beef Roulade

2 ea Bunches arugula 1 x Olive or salad oil
1 ea Small onion,minced 1 ea Celery stalk,minced
8 oz Pkg. mushrooms,minced 1/2 t Salt
1 1/2 lb Lean flank steak 2 t Cracked black pepper
10 1/2 oz Can condensed beef broth 1/4 c Red wine
1 x Cherry tomatoes for garnish
Reserve a few arugula leaves for garnish.Chop remaining arugula leaves
to measure about 2 cups packed.In a 12" skillet over medium high heat,in 2
tbsp. hot oil,cook onion and celery until tender,stirring occasionally.Add
mushrooms and continue cooking until mushrooms are tender.Add chopped
arugula and salt.Cook until arugula just wilts,stirring,constantly;remove
vegetable mixture to a small bowl.
Trim fat from flank steak.On a cutting board,with meat mallet or dull
edge of French knife,pound flank steak to about 1/4"
thickness.Evenly,spread vegetables over top of meat.Starting at narrow
edge,roll steak,jelly roll fashion and tie securely with string.With
hands,press pepper into steak roll.
In same skillet over medium high heat,in 1 tbsp. hot oil,cook steak
until browned on all sides.Pour undiluted beef broth and wine over
steak;heat to boiling.Reduce heat to low;cover and simmer until steak is
tender,about 30 minutes,basting occasionally with sauce in skillet.
To serve,remove string and slice roulade into 1/2" thick slices.Pour
sauce onto platter.Place slices of roulade over sauce.Garnish with cherry
tomatoes and reserved arugula leaves.

Title: Steak with Braised Endive

4 ea Boneless beef top loin steak 1 ea Medium onion,thinly sliced
2 T Dry sherry 2 T Worcestershire sauce
3/4 t Dried rosemary leaves 1/4 t Black pepper
1 x Olive or salad oil 1 x Salt
4 ea Large head Belgian endive 1/2 t Sugar
Trim fat from steaks.In a 13 x 9" baking dish,combine steaks with
onion,sherry,Worcestershire sauce,rosemary,black pepper,1 tbsp. olive oil
and 1/2 tsp. salt,then arrange steaks in one layer in dish.Cover and let
steaks marinate in refrigerator for 1 hour.
After steaks have been marinated,cut each endive,lengthwise,in half.In a
12" skillet over medium high heat,in 2 tbsp. hot oil,arrange endive,cut
side down.Cook,uncovered,until cut sides are lightly browned.Turn endive
cut side up;reduce heat to low;add 1/4 cup water to skillet.Sprinkle
endive with sugar and 1/4 tsp. salt.Cover and cook 10 to 15 minutes until
tender.
Meanwhile,preheat broiler if manufacturer directs.Remove steaks from
onion mixture.Place steaks on rack in broiling pan.Place pan in broiler at
closest position to source of heat.Broil 4 minutes;turn;broil 4 minutes
longer for rare or until desired doneness.
In a 2 quart saucepan over medium high heat,cook onion mixture until
onion is tender crisp.Serve steaks with endive and onion mixture.

1 ea Medium onion,chopped 1 ea Medium red pepper,chopped
1 c Chopped bread-butter pickles 6 1/2 oz Can tuna,drained,flaked
1/4 c Taco sauce 1 c Shredded Cheddar cheese
1 c Shredded Monterey Jack cheese
Preheat oven to 350 degrees.Arrange bottom halves of rolls on a cookie
sheet.In skillet,in oil,saute onion and bell pepper until tender.With slotted
spoon,place onion mixture on roll halves.To skillet,add pickles and
tuna.Saute 2 minutes;spoon over onion mixture.Top with taco sauce and
cheese.Replace top halves of rolls.Cover,loosely,with foil.Bake until
cheese melts.

6 ea Slices Swiss cheese 4 oz Neufchatel cheese
Combine first 5 ingredients;divide on top of 6 bread slices.Top with
avocado,pickle and Swiss cheese.Spread remaining bread with Neufchatel
cheese;place on sandwiches,cheese side down.
