  1.                            ENCHILADAS

  4. 2 c. ricotta
  5. 1 egg
  6. 1 c. green onions
  7. 2 T. chopped chilies
  8. 1 t. cumin
  9.  
  10. 1 c. jack cheese
  11. 8 tortillas
  12. 10 oz. enchilada sauce
  13. 2 c. cheddar cheeseStir first six ingredients together and fill tortillas.  Put
  14. in greased 8 x 12 glass pan.  Pour sauce over.  Microwave on high
  15. for 11 to 13 minutes, rotating once.  Cover with cheddar cheese
  16. and cook on high 1 to 2 minutes.
