LEMON POPPY SEED MUFFINS
2 c. sugar
3/4 c. butter
1/4 c. shortening
1-3/4 t. salt
2 T. lemon juice
4 eggs
4-1/2 c. flour
2-1/2 T. baking powder
2 c. milk
2-1/2 T. poppy seedsCream first 5 ingredients until smooth, 2 minutes. Add eggs
one at a time and beat 2 minutes. Add flour, baking powder and
milk with mixer on low for 2 minutes. Stir in poppy seeds. Fill
paper baking cups two-thirds full. Bake at 425 degrees for 15 to
18 minutes. Makes 2 dozen.
