FETTUCINI WITH PEPPERONI-PEPPER SAUCE
1/4 c. olive oil
1 chopped onion
1 chopped green pepper
2 minced garlic cloves
1/2 lb. sliced pepperoni
1 lb. canned plum tomatoes
1/2 t. oregano
1/2 t. basil
salt and pepper to taste
12 oz. fettucini
grated parmesan cheeseHeat salted water for fettucini. Saute onion, green pepper
and garlic in oil until tender, about 5 minutes. Add pepperoni,
tomatoes, oregano and basil. Break up tomatoes with back of
spoon. Cook about 5 minutes, stirring, until mixture tickens
slightly. Season. Cook fettucini to al dente state. Drain and
place in bowl. Toss with sauce and serve with parmesan. Makes 4
servings.
