Title: Dairy Beef Casserole

1 lb Lean Ground Beef
1 tb Butter
1/4 c Onion; Minced

16 oz Tomato Sauce; 2 Cn

1 c Sour Cream
1 c Cottage Cheese; Creamed
1 1/4 c Carrots; Sliced, Cooked
8 oz Md. Noodles; Cooked & Drain
1 c Cheddar; Md, Shredded
Brown the ground beef in the butter and add the onions and garlic. Stir
in the tomato sauce, salt and pepper. Combine the sour cream, cheese and
carrots. Add the combination to the noodles and mix. Alternate layers of
the meat mixture and the noodle mixture in a 3-quart casserole, beginning
and ending with the noodle mixture. Top with the cheddar cheese. Bake at
350 degrees F. for at least 45 minutes and serve hot.

* Cut the eggplant into 1/2-inch cubes.

Fry the bacon in a large skillet, until almost crisp. Add the eggplant,
onion and zucchini. Saute until the eggplant is tender, about 10 minutes.
Place half the vegetables in 4 individual casseroles (1 1/2 to 2 cups
capacity) and spoon the wheat germ on top of the vegetables. Sprinkle
with half of the cheese. Top with the tomatoes and remaining vegetables.
Combine the tomato sauce, water and seasonings then pour the mixture over
the vegetables. Sprinkle with the remaining cheese. Bake, uncovered, at
375 degrees F. for 20 minutes or until hot.

1/3 c Butter Or Regular Margarine
3 t Unbleached Flour
1 1/2 c Milk; Heated
1 c Cheddar; Sharp, Shredded
1 c Ham; Cooked, Diced
1 tb Onion Flakes
2 c Potatoes; Cooked, Sliced
1 tb Parsley; Minced
Preheat the oven to 400 Degrees F. Butter a 2-qt casserole and set aside.
Melt the 3 tb of butter in a 2-quart saucepan, on moderate heat, and add
the flour; cooking for 2 minutes, stirring constantly. Add the milk and
cook until thickened, stirring constantly. Add the cheddar cheese and
stir until melted. Remove from the heat and stir in the ham and onion
flakes. Stir in 1 cup of potato slices. Pour into the prepared
casserole. Arrange the remaining potato slices on the top of the Ham
mixture. Melt the remaining butter and brush on the potato slices.
Sprinkle with the minced parsley and bake for 20 minutes or until heated
through. Serve hot.

1 tb Chili Seasoning Or Chili Pow
1 ts Cumin Powder

2 c Canned Tomatoes; Crushed
1 x Cheddar; Md, Diced, To Taste
1 x Parmesan Cheese
NOTE: When using the cheese, you can use 1 cup or more depending on
your taste for cheese.

Saute the beef, garlic, onion, and green pepper in the oil over a slow
fire until the beef loses its pink color, about 10 minutes. Add the chili
seasoning (or Chili Powder), cumin powder, and the salt and pepper. Stir
well. Add the tomatoes and cheese and pour the mixture into a large bowl.
Add the cooked macaroni and blend well. Season to taste. It may be
necessary to add 1/2 to 1 cup of water as the mixture should be moist.
Pour into a large greased baking pan and sprinkle generously with the
Parmesan cheese. Bake at 350 degrees F. for 30 minutes and serve hot.

Combine the eggs, milk, mustard and seasonings. Add 1 cup of the cheddar

pour into a buttered 2-quart shallow baking dish. Bake in a preheated 350
Degree F. oven for 45 minutes and remove from the heat. Quickly sprinkle
the remaining cheddar cheese on the top and serve hot.

Cook the vegetables in boiling water until tender and drain. Stir in the
remaining ingredients, except the ground meats, and blend well. Add the
meats, blending well, and shape into a loaf baking dish that will hold the
mixture. Bake at 350 degrees F. for 1 1/2 hours. During the last few
minutes of the baking time, place several strips of Cheddar Cheese on the
top of the loaf as a garnish. Serve hot.

Combine the meat, bread crumbs, barbecue sauce, egg and salt, blending
well. Pat the meat mixture into a 14 X 8-inch rectangle on foil or waxed
paper. Combine the cheddar cheese, bread crumbs, green pepper and water
and pat the cheese mixture over the meat mixture. Roll up roll fashion,
starting at the narrow end. Chill for several hours or overnight. Slice
into 6 servings and bake in a shallow casserole in a preheated 350 degree
F. oven for 25 to 30 minutes. Serve hot.

Heat the oven to 350 degrees F. Combine the meat, 1 cup of cheddar

and pour off the drippings. Pour the tomato sauce over the meat and
sprinkle with the remaining cheddar cheese. Return to the oven and

16 oz Mushroom Soup; 1 1/2 Cn.
1 c Sour Cream

Toast the cubes of bread slightly in the oven. Combine the bread,
chicken,celery and onion, and place in the bottom of a 9 X 13-inch baking
pan. Beat the eggs and mix in the milk, blending well, and the salt and
pepper. Pour over the bread mixture, (DO NOT STIR!!). Refrigerate for
several hours or overnight Before cooking, combine the soup and the sour
cream and spread gently over the top of the casserole. Bake in a
preheated 300 degree F. oven for 1 hour. Sprinkle with the cheddar
cheese, and paprika (if desired), during the last 10 minutes of baking.
Serve hot.

Combine the flour, salt and pepper and pound the mixture into the meat
until the meat becomes thin. Cut the meat into 2 serving pieces. Place a
stick of the cheddar cheese lengthwise on each portion of the meat and
the meat over the ends of the cheddar strip and roll up tightly. Secure
with a wooden pick or skewer. Melt the butter in a skillet and brown the
meat and onion. Add the catsup, water and oregano and cover. Simmer for
20 to 25 minutes or until tender. Serve hot.

* The two slices of fresh bread should have the crusts removed and they
should be torn into small pieces.

Cook the noodles according to the package directions and drain. Mix 2
eggs, the salt and noodles together and set aside. Combine the bread and
milk and set aside. Pan fry the pork and onion until the pink color
disappears from the meat and drain off the excess fat. Combine the meat
and onion mixture with the milk mixture then add the parsley, sage, garlic
powder and pepper and set aside. Combine the cheeses and reserve 1/3 of
the mixture. To assemble the casserole, spread 1/3 of the noodles in the
bottom of a 3-quart baking dish. Cover with 1/2 of the meat mixture and
top with 1/2 of the remaining cheese mixture. Repeat ending with the
noodles. cover and bake in a preheated 350 degree F. oven for 45 minutes.
Combine the reserved cheese with the 2 remaining eggs and spread over the
noodles. Return to the oven and bake, uncovered, for another 10 minutes.
Garnish with strips of pimento and chopped parsley.

preheated 350 degree F. oven for 35 minutes. May be served plain or with
your favorite tomato or egg sauce.

* The can of soup should be condensed Cream Of Mushroom Soup.

Beat the eggs, nonfat dry milk, water, salt and pepper together, blending
well. Stir in the macaroni, tuna, cheddar cheese, onion, and pimento.
Pour into a buttered 1 1/2-quart shallow baking dish. Bake in a preheated
350 degree F. oven for 30 to 35 minutes, or until a knife inserted near
the center comes out clean. Serve hot with hot Mushroom Sauce.
EASY MUSHROOM SAUCE:
Drain the can of mushrooms, reserving the liquid. Add enough water to the
liquid to make 1/3 cup and stir the liquid into the nonfat dry milk. Stir
in the mushroom soup and heat on medium heat until hot. Serve over Tuna
Macaroni Bake.

Place the fish fillets on a buttered broiler pan. Brush the fillets with
the melted butter and broil 8 to 10 minutes or until the fish flakes
easily with a fork. Combine the remaining ingredients, blending well.
Spoon onto the fish fillets and broil an additional 2 to 4 minutes or
until the cheddar begins to melt and is browned lightly.

Make a white sauce with the butter, milk, flour and seasonings. Add the
cheeses and stir until they are melted. Stir in the flaked fish,
mushrooms and pimento and heat through. Serve over the hot rice and
garnish with parsley, if desired.

Cook rice according to package directions. Chop the parsley and onions
very fine. Mix all of the ingredients together and pour into a well oiled
ring mold. Let stand for 30 minutes. Bake in a preheated 325 degree F.
oven for 35 minutes. Turn out onto a hot platter and fill the center with
creamed shrimp and hard cooked eggs. Serve at once
