-= A VERY SPECIAL CAKE RECIPE =-
Be sure your guests are worth the work.
-= 2 WEEKS BEFORE BAKING
Be sure they're very dry,
1 Cups DRIED APPLE CHIPS
1/2 Cup DRIED WHITE RAISINS
1 teaspoon CINNAMON
Place fruits and spice in a 1-quart
JAR and add enough APPLE SCHNAPPS to
cover, plus 1/2 inch.
-= BAKING DAY IN A WARM, COZY KITCHEN
Preheat oven to 325 F.
Prepare 2 pans by lining with foil,
greasing and sprinkling with POWDERED
SUGAR.
Decorate the pan bottoms with some of
the APPLE CHIPS and RAISINS.
BRING TO ROOM TEMPERATURE-
1/2 Cup BUTTER (soft or melted)
3 EGGS
1 Cup MILK
1 teaspoon VANILLA
1/2 Cup HONEY
1/2 Cup APPLE JUICE
1 Cups SUGAR
SIFT TOGETHER TWICE-
2 1/2 Cups ALL PURPOSE FLOUR
4 1/2 teaspoons BAKING POWDER
1/2 teaspoon SALT
1 Tablespoon CINNAMON
1 Tablespoon GINGER
1 teaspoon CLOVES
1/2 teaspoon NUTMEG
1/2 teaspoon MACE
CREAM BUTTER & SUGAR. ADD EGGS & beat
until smooth.
ADD remaining ingredient mixing to
smooth batter, scraping bowl often.
POUR batter evenly into pans.
BAKE in center of oven 40-45 minutes.
TEST cake: wooden pick inserted in
center should come out clean.
COOL cake on rack 10 minutes and remove
turn out of pan(s). When cooler, place
cake in freezer until tomorrow.
-= NEXT DAY
If baked in loaf pans, CUT cake
horizontally to form thinner layers.
SET one layer on serving dish.
POUR,up to,1/4 Cup of LIQUID from fruit
jar into the bottom layer.
PREPARE FILLING-
Bring to boil:
1/2 Cup APPLESAUCE
1/3 Cup ORANGE JUICE
1/3 Cup SUGAR
1/4 teaspoon SALT
STIR in 3 Tablespoons CORNSTARCH
dissolved in 1/3 Cup APPLE JUICE
COOK until thickened, (5 minutes),
remove from heat and
ADD 1 Tablespoon LEMON JUICE.
COOL thoroughly then spread over bottom
layer.
PLACE top cake layer in place.
POUR, up to, 1/4 Cup LIQUID into top
layer
PREPARE ICING-
WHIP 2 Tablespoons soft CREAM CHEESE
1 Cup POWDERED SUGAR
enough LIQUID from the fruit
jar to blend to a thick icing.
SPREAD ICING over top/sides of cake.
DECORATE top with slivers of APPLE from
the fruit jar.
SERVE with warning of content.
