- When eating with chopsticks, POSITION one chopstick between
- thumb and index finger, supporting it on the ring finger and holding
- it like a pencil. This chopstick will be stationary. HOLD the other
- chopstick with the tips of thumb, index, and middle fingers - this
- one will move. MOVE the top chopstick up and down with your thumb and first finger.

- To eat sushi, GRASP it by placing one chopstick on either side of the
- rice and fish. TURN the Sushi piece on its side, to ensure the rice does
- not crumble. DIP one corner of the fish topping, "tane," into the soy
- sauce and place the sushi in your mouth with the tane down, so that
- it is the first part to hit your tongue. This is considered the correct
- way to enjoy the taste of the sushi. It is common to dip the rice
- instead of the fish in the soy sauce. This should be avoided, however,
- as it makes the rice patty crumble, and the soy sauce overpowers the
- subtle taste of the vinegared rice.
