La Cristalline d'Agrumes au Coulis de Fruits rouges was our dessert at Le Garden, in the center of Orange. This was citrus fruit (agrumes), mandarines and pink grapefruit slices, in a gelatin, lying in a sauce of red berries and fruit (coulis de fruits rouges). The pale-green, star-shaped slices are rocambole, sometimes called Spanish garlic (we'd never heard of them before, and they were too bitter to eat).
