Most fries in North America, incuding all at fast food resaurants are frozen, skinless, and usually thin. However, many idependant operators, especially "chip trucks" cut fresh potatoes, leaving the skin on. I think most people regard these as tasting far superior, and are willing to pay a premium price. Before I reformed my diet, I always regarded these fries as a treat. Also popular here is (Quebec invented) poutine - fries (of any variety) with curd cheese and gravy.
