Try one of the following; all from Angela Hynes "The Pleasures of Afternoon
Tea:
OVEN SCONES -
2 c. self-rising flour 1 tbs. baking powder
pinch of salt 2 tbs. cold butter, cut in
1 to 1-1/3 c. milk, plus a little small pieces
for brushing on scones Butter
Preheat oven to 450F (230C). Very lightly grease a large baking sheet;
set aside. Sift flour, baking powder and salt into a lrg. bowl. With
your fingers, rub in butter until mixture is crumbly. Make a well in
center of mixture; add milk and mix with a fork to make a dough that
barelly holds together (you may need to press dough together with your
hands). Turn out onto a floured surface and knead lightly just until
smooth. Roll out with a floured rolling pin or pat dough with your
hands to make a round about 3/4 in. thick. Cut in rounds with a 2 in.
fluted or plain cookie cutter. Arrange 1 to 1-1/2 in. apart on baking
sheet; brush tops lightly with milk. Bake 8-10 min. or until well
risen and golden. Transfer to a wire rack and cool 5 min. Split and
serve warm with butter. Bakes about 12 scones.
Variation: Rich Oven Scones: Add 1 tbs. sugar to the dry
ingredients. In place of the 2/3 c. milk, use a mixture of 1 lightly
beaten egg and 5 tbs. milk.
CARIBBEAN SCONES
1 c. all-purpose flour 2 tsp. baking powder
1/2 tsp. salt 1 tsp. sugar
1 c. mashed cooked sweet 3 tbs. butter, melted, cooled
potatoes Butter
Honey, if desired
Preheat oven to 375F (190C). Grease a baking sheet; set aside. Sift
flour, baking powder and salt into a mediu;m-size bowl; stir in sugar.
In a lrg. bowl, thoroughly mix potatoes & 1-1/2 tbs. melted butter
w/fork. Add dry ingredients and mix to form soft dough. Turn out onto
a floured surface. Roll out w/floured rolling pin or pat dough w/your
hands to make a round about 1/2 in. thick. Cut into rounds w/2-in.
fluted or plain cookie cutter. Place 1 to 1-1/2 inches apart on baking
sheet; brush tops w/remaining 1-1/2 tbs. melted butter. Bake about 20
min. or until light brown. Split and serve warm w/butter & honey.
Makes about 10 scones.
