Soba and Udon

Soba (buckwheat noodles) and Udon (wheat-based noodles) are two typical types of Japanese noodles. They are both boiled and then eaten warm in a mild-flavored broth with various toppings. They can also be eaten cold, dipped in a chilled broth.
