Tempting Tastes With or Without Sugar

The Senza story

Senza Zucchero, the first sugar-free flavoring syrup, finally has s sugared partner: Senza Rivale. The parent company, Ricter Enterprises, now offers distribution of a full line of Senza gourmet syrups to coffee bars, grocery stores, and other gourmet outlets.

Although some might suggest the brands were introduced in reverse order (sugar-free first), President Richard Carlson disagrees. He has hypoglycemia, which makes him sugar-intolerant and has given him a passion for tasty sugar-free products.

While operating espresso carts in 1990, Carlson received so many requests for sugar-free product that he started to serve sugar-free mochas using prepackaged cocoa. He knew there had to be a better way, so he began experimenting with aspartame-based syrups at home.

In 1991 Carlson pitched sugar-free syrup recipes to the giants in the industry. None of them thought there was a market for sugar-free, so Carlson decided to do it himself and in 1993 Senza Zucchero was launched.

"Just about every company I talked to about Senza Zucchero three years ago has developed a sugar-free product in the last year," Carlson reports. "Although they have yet to catch up, I realize that I have to do something to stay a step ahead." After working on sugar-free product for several years, Carlson found working with sugar "relatively easy." His 30 new Senza Rivale flavors display an "unrivaled" blend of tastes, aromas and textures.

Many Senza Rivale flavors challenge the palate to recognize complex combinations of sensations. "I build the profile of the Hazelnut, for instance, to finish with a hint of freshly shelled nuts," Carlson says. "I layer tastes, aromas, and textures to appeal to the entire sensory enjoyment of the product." Senza Rivale flavors owe a lot to Carlson's wife, Teresa, who is very involved in the tasting process. "It has been wonderful to have an experienced partner to help - especially with the sugared flavors."

Senza syrups are available in 750 and 150 ml glass bottles and 750 ml plastic bottles, and can be found in grocery stores, coffee bars and restaurants across the nation.
