I'm not too sure if there is a place to get Pakistani visa
near the border, you might have to do it in Beijing.
They do issue transit visa at the border in Pakistan.
I didn't need one but have met people who were given transit
    for 7-14 days.

The only embassy is in Beijing, but it was (is?) possible
to get transit visa for one week on the border for free. It
was possible to extend this visa in Islamabad.
From Urimqui to Kashgar is nothing special, Kashar is great
    - Sunday market is a must, On the way to the border can be
nice stop on the lake near Muztag Ata - nice landscape and
some yurts there - but after that it can be difficult to
get transport from there to Pakistan, because all busses
    are going from Kashgar.
