DELICIOUS APRICOT BARS (Makes 75 mini bars)

Things to prepare:

2 cups dried apricot

1/2 cup margarine or butter

1/2 cup granulated sugar

2 1/2 cups all-purpose baking mix

2 cups brown sugar

4 eggs beaten

2/3 cup all-purpose baking mix

1 teaspoon vanilla

1 cup chopped nuts

powdered sugar

Instructions:

Preheat oven to 177 degrees Celcius (350 Fahrenheit)

1) Place apricots in a 2 litre (2 quart) saucepan, add enough water to cover.
2) Heat to boiling, reduce heat and simmer uncovered for 10 minutes.
3) Cool, chop and set aside.
4) Cut butter into granulated sugar and 2 1/2 cups all-purpose baking mix until crumbly.
5) Pat into an ungreased roll pan 40 cm x 27 cm x 2.5 cm (15.5 inch x 10.5 inch x 1 inch).
6) Bake for 10 minutes.
7) Beat brown sugar and eggs.
8) Stir in apricots, 2/3 cup all purpose baking mix, vanilla and nuts.
9) Spread over baked layer and bake for 30 minutes longer.
10) Cool completely.
11) Cut into 2.5 cm x 5 cm (1 inch x 2.5 inch) bars.
12) Roll in powdered sugar.
