Your computer's graphics card isn't supported by the installed BeOS graphics drivers. As a result, the default "fail-safe" driver, a 640x480 grayscale driver, is being used.
You won't be able to change the depth of the screen, but you can change its "virtual" size. The display still only shows 640x480 pixels at a time, but when you move the cursor to the screen, the display scrolls to a new portion of the "virtual" screen.
From: /optional/experimental/drivers/app_server/
To: /home/config/add-ons/app_server/
...and then reboot. There are no guarantees with these drivers, so be sure you know how to get back to the fail safe driver, as explained below.

Download the driver that fits your card, put it in your
/home/config/add-ons/app_server
directory,
and then reboot.
Again, you should read the following "Safe Booting" section before loading
a new driver.
If you boot your machine and find your screen is unusable, you'll have to "safe boot." To do this, reboot your machine and when the BeOS logo appears, press and release the spacebar. When the Boot Loader menu appears, go into the Select safe mode options menu, select the Safe mode option, and then continue booting.Once you've safe booted and can see again, remove the drivers that you loaded into your
/home/config/add-ons/app_server
directory.
