Fly With Us is, probably, the most popular and well known. I received a free catalog from MiG's Etc (similar company based in Florida) and their packages sound very attractive: L-39 ride priced as low as $1,200. You can check for yourself Ken Thompson's account of the trip. There is third company on the market called ASA Aerospace which services Europe with Super-Fighter Program.
Some day I will save enough for a ride in Su-30:-) (BTW, I am not working for them:-)
There is a great State of the Russian Navy Data Page and plenty information on a military aviation on the Web. Scarce Russian aviation related information is scattered all over the Web and I have decided to keep all links in one place. In case if I have skipped few, my apologies to the authors - of course it is nearly impossible to explore the whole WWW single handedly. Nevertheless RAP is a good place to start if you searching for the web sources on this subject.
Russian Aviation FAQ combines usenet answers (can I say collective conscious:)), my own short reviews, extracts from rec.aviation.military FAQ and tons of useful links to somebody else pages. If you have some material which you would like me to include in RAFAQ, please send me E-mail.

In summer of 1994, I visited Monino Central Museum of Voenno Vozdushnukh Sil (Air Force). It is the largest collection of aviation artifacts in Russia. I've managed to take few photos, but was warned and in fear to be asked to leave the facilities and to loose the film I interrupted my photo session. The place was still taboo for visitors with cameras (unless you are lucky, can make friends quickly or bribed you way through).

There are three videos covering most of Russian aviation museums available from Jet-Age Products. I have not seen those and have no idea how good they are.
Moscow Aerospace Salon took place in August 22-27, 1995 at airport Zhukovskii in Moscow. More than 145 aircraft were on display. Check out a report from MAKS'95.
