Russian Imperial Stout (c) copyright 1989 by Mark Bartkowiak 73115,352 Well, all I did was look in Charlie's book in the chart section and I Made up this recipe: 45 min boil 15 min steep(finish) 10lbs (3cans) M&F hopped amber malt extract 3 lb Laaglander dried dark extract 1 lb. crystal malt 1/4 lb Black Patent Malt 1/4 lb Roasted Barley Malt 2 oz. Fuggles Hops (boil) 2 oz. Cascade Hops (boil) 1/4 oz. Cascade Hops (steep) 1/4 oz. Hallertauer Hops (steep) 1 tsp Irish Moss (steep) 1 pkt ale yeast 1 cup corn sugar (primimg) a floating aquarium thermometer will float on it's side in this brew. O.G. 1.072 just to start. Age it for atleast 6 months to let the grains to mellow out. You know, cut the bitterness of the dark grains. The only modification to my origanal brew is the whole bag of dried malt instead of just 1 lb. 3 lbs are better than 1 lb. Estimated alcohol about 8-10%. Brew 1 was smooth and mellow, dark but not too dark. a light still shined through and clear as all get out! I normally like Light beers, like pale ales and bitters. I have come up with a black bitter called Black Adder Bitter. I like it, and according to the Lovely assistop here, I got 2nd in class for Pale Ales, I only use HARD water so if your water is hard, don't add water crystals.
