Letters embedded in an image have jagged edges

Image processing software expresses text characters in pixels. Because of this, even if an outline font is used when the image resolution is low, the edges of the characters may appear jagged as if a bitmapped font were used.

In this case, increase the resolution of the original image to 300 dpi, then re-enter the text. If your image processing application has an anti-alias feature, turn it on. This smooths the periphery of the characters.

Selecting Anti-Aliased in Photoshop's Type Tool dialog box

If you want to make the edges of the characters even smoother, use a drawing application to load the image, and place the text on top of it.
