Each Scientific Notebook document is created with a template called a shell file. When you start the program, it automatically opens a default shell file. If you want to produce a similar document, you replace the content of the shell with your text and mathematics, according to the instructions in the shell. If you want to create some other kind of document, open a new file using a different kind of shell. Any document can serve as a shell.
