A. Sales figures are collated every night electronically
2 and are available to anyone in the company in the
managements hierarchy who want to see them.

Q. What about labour costs percentages?
4 A. That is not collated nightly, no.
5 Q. Is it collated every month?
A. Monthly.

Q. Weekly?
7 A. Monthly. It is published monthly in a restaurant --
by restaurant profit and loss statement.

Q. Would you see those figures?
9 A. Yes, sure.
10 Q. At those management meetings, management group meetings?
A. I would not look at every single of 500 restaurants. I
11 would look at the total, or I might look at it regionally,
but certainly it would be there to be looked at and
12 examined, talked about, if we wished.
13 Q. Who is in charge of, say, health and safety matters?
A. There is a senior vice president to whom health and
14 safety matters are part of his brief.

A. His name is Andrew Taylor.

17 A. I do not know.
18 Q. Who decided which witnesses to bring in this case? Did you
have an over view of that?
19 A. I think it was based on what you had published in this
document; the people we thought best qualified to speak to
20 the untruths written here.

A. One hundred per cent satisfied.

Q. Right. So who reports to you about health and safety

A. Andrew Taylor.

Q. Has he reported to you? Do you believe what he tells you?
25 A. Yes, I believe what he tells me.
26 Q. But he has never shown you national statistics about
accidents in stores for employees?
27 A. Not that I can remember, not totally all the company
stores, all the licensee stores. I do not recall seeing a
28 summary of national statistics. He may be shown them by
people who work for him, but he reports to me on the
29 status of what is happening in the McDonald's restaurants
around the UK. He is charged with overseeing the
30 function, he reports on that. I take him for his word.
