Puff Pastry

Things to prepare:


To make about 30

2 blocks of Valbreso (kind of Feta cheese) - comes pre-packaged or you can buy by the pound
1 small bag of Mozzarella cheese - shredded
2 egg whites, 2 egg yolks
The egg whites, you beat them and mix it with the CHEESE. The egg yolks, you beat them and later brush it on the pastry before baking
Black pepper (you can also add parsley or spinach if you want)

In a bowl, mix all of the above.

2 bags of Puff Pastry - have many brands but prefer MidEast brand - comes about 10 per plastic bag
Pastry needs to be kept frozen until use - take out from freezer 2 hours before use

Instructions:

1) Cut the Puff Pastry in half - fill with the above mixture - not too much
2) Press with your fingers around the edges - leaving about 1/2 centimeter around the edges so that it could PUFF
3) On a cookie sheet, spray with PAM or olive oil. Lay the pastry out with some space in between
4) Bake at 275 degree Fahrenheit and when it starts rising, increase to 300-325
5) Total baking time should be about 30 minutes
