Feta Cheese Omelette

Things to prepare:


2 - 3 eggs
1 Tbsp water
1 - 2 tsp olive oil
Pinch of dried oregano
Salt & Pepper to taste
Optional - ΒΌ cup crumbled Feta cheese

Instructions:

1) In a small bowl, beat eggs with water, salt and pepper
2) Heat an 8-inch skillet over medium heat. Add just enough olive oil to film the bottom of the pan. (Be careful not to add too much oil.)
3) Pour the beaten egg mixture into the pan. Reduce heat to low. Keep lifting the edges of the eggs as they cook so that the uncooked egg runs to the bottom of the pan. If necessary, tilt the pan as the eggs set.
4) Sprinkle the oregano and the Feta cheese over the top of the eggs. Keep shaking the pan to prevent sticking. When the cheese begins to melt, remove from heat.
5) Shake the pan until the eggs slide to the edge of the pan. Slide half of the omelet onto the plate and flip the other half over it.

Serving suggestions: This omelette can be turned into a quick lunch or light dinner by adding sliced tomatoes and fried potatoes. A good crusty bread goes well with it.
